Today is all about oatmeal! I am trying to get away from eating the prepackaged oatmeals and to start eating plain quick oats with my own (healthier) add ins!

This week I had it twice! I do 1/2 cup plain quick oats, 1 cup skim milk and microwave it for about 2 minutes. Using milk makes is super creamy to start with!

Then I added in strawberries and a banana one day and 2 servings PB2 and a banana the other day. Both were delicious and filling! Here are photos!

Bountiful Basket!

I had a friend tell me about this wonderful co-op called Bountiful Baskets! It is AMAZING! Every two weeks you can sign up for a contribution and then you go pick up on Saturday and come home with some WONDERFUL produce! I have done it twice now and it is awesome 🙂

Here is this week’s basket and the photo below it was the basket I got the first time (about a month ago). Everything was amazing too! Fresh, yummy and we gobbled it all up!

Foodie Friday!

So this week, I am featuring what I eat for dinner every Monday night! In our house, Monday is ‘taco night’… well, I don’t want or need the tortillas, so I simplified mine into a taco salad! It is yummy and filling and I always look forward to it! My kiddos eat their tacos and are happy, too, so it is a win-win situation.

On my taco salad is lots of yummy stuff!

-A base of shredded lettuce.
-2 teaspoons EVOO
-Fat Free refried beans (usually 4-5 ounces)
-taco meat (usually 3-4 ounces… I make it with 97% lean beef)
-one serving Reduced Fat shredded cheddar cheese
-mild salsa
-light sour cream
-fresh mashed avocado

It typically ranges around 15 PPV, which is normal for dinner for me (I get 47 PPV a day right now… as I lose weight/lose points, I will still eat the same things, just adjust how much of it I eat)

Zucchini chips

So I have wanted to make these for a while now, but I seemed to always use my zucchini up before I could get to them! Today I made an omelette for breakfast with some zucchini in it, so I used the rest of it for the chips!

They were DELICIOUS! So I made another whole batch up, and took photos this time 🙂

Basically you need a zucchini, a mandoline (or slice them thinly with a knife), EVOO mister, cooking spray and your oven!

First I preheated my oven to 350 degrees.

Then I sliced my zucchini using the thinnest setting on my mandoline (This is the one I have and I LOVE it!).

Next, spray your pan with cooking spray. I used my Pampered Chef large round stone with handles.

Then lay the slices of zucchini out in one layer. Spray lightly with EVOO from your mister. I use this one.

Place in oven and bake for 10 minutes. Turn all slices over. Bake for another 5-10 minutes. When they start to brown a tiny bit, I turned the oven to broil on the low setting. Watch closely now and take out when they brown a bit more!

Be careful … they can burn quickly …

They should look like THIS! Take out and sprinkle with salt and let cool a bit if you can! YUM!

Foodie Friday!

So I have been toying with the idea of having a weekly segment on here … I love food and I love that I can eat all sorts of yumminess while following Weight Watchers! (Lifestyle change people, NOT a diet!!!) So I have been taking lots of photos of my food and plan to post a ‘foodie Friday’ post each week! I am excited to share the different meals and snacks I make and enjoy 🙂 Some are a bit more complex and some are downright simple! I will try to share the recipe if I followed one and the points plus value (PPV) if I remember! So here we go, first edition of….

I am starting simple…. but oh so yummy! This is my rendition of ‘ants on a log’ …

Celery stalks, PB2 (mix the powder with water to reconstitute it), raisins and semi-sweet chocolate chips! Slather the PB2 on celery and carefully place raisins and ch. chips so every bite is DELICIOUS! Mmmmm! Can’t remember the exact PPV for this but it was not bad at all 🙂 Didn’t need a whole lot of raisins or ch. chips…

Pollen attack!!!

The joys of living in Georgia in spring time … pollen! It literally covers EVERYTHING! There are actually huge ‘clouds’ of the stuff floating around.

I thought I was safe, but no … started feeling under the weather on Tuesday night. Luckily a friend gave me some allergy medicine to try and it seemed to work (along with my inhaler and some Aleve) and I am feeling mostly human when taking those three things.

My biggest fear on this healthy journey is that I will get derailed and give up. So far so good … I have continued making healthy food choices and tracking. I did skip a workout yesterday, but since I had a tight chest and couldn’t breath all that well, I figured that was the safest bet for me. Going to attempt to get some sort of workout in today.

Tomorrow is my 12th weigh in and I want to hit my 20 pounds lost goal! After my gain last week, I am 1.8 pounds away from that goal! No matter what happens on the scale tomorrow, I know that I am in it to win it (well lose it really haha!) and I will continue making good choices every day/hour/minute!!!

 

She’s baaaaaaaaack!!!!

Started the 30 Day Shred back up today … forgot how much it hurt! Better go shower now so I can wash my hair!

I just looked at my activity calendar and today was my 17th workout this month!!! That is a great track record for me! Usually Sundays and Mondays are days off for me, so I am not sure I will get anymore in this month, but I definitely plan to beat that number for April!!! #InItToWinIt #Motivated #GettingHealthy
