The kiddos had sweet and sour chicken (freezer meal!) and leftover rice for dinner, so I had to make something for me … I had one leftover chicken thigh in the fridge plus most of the fixins’ for fajitas, so that is what I did!
I diced up some onions, yellow squash and zucchini and sautéed that with 2 tsp of EVOO. Added in three mushrooms chopped up and the piece of chicken chopped up. Sprinkled in some Montreal Chicken seasoning and warmed it altogether!
I used two fat free flour tortillas, 1 serving mexican cheese mix and a single serve container of nonfat greek yogurt (in place of sour cream).
Oh my goodness it was SOOOOOOO good! I could have eaten 10 of them but I had my 2 🙂
